This is one of my favourite dinners. It's so easy and quick, so perfect for midweek when you're feeling a little lazy but want something quick, but it's also delicious, full of goodness and warming. 

You will need

Olive oil
300g of cooked and peeled prawns
200g of cherry tomatoes
1 red chilli
2 cloves of garlic
300g wholewheat linguine
Sour cream to serve (optional)

How to

Crush the garlic cloves, roughly chop the chilli and chop the tomatoes into quarters

Fill a pan with water add a pinch of salt and bring to the boil. Once the water is boiling add the linguine and cook for 10-15 minutes.

Whilst the linguine is cooking heat a frying pan with a glug of olive oil. 

Once the pan is hot add in the garlic, chilli and tomatoes. Cook them until they are soft and smelling divine then add the prawns and warm them through. 

Once the linguine is cooked, drain it and add to the pan of prawns, garlic, chilli and tomatoes. Stir the lot together and serve.

It really is that simple. If it is too spicy for you add a teaspoon of sour cream to your bowl and stir it all together. Either way it is delicious and can beaten on it's own or served with some crusty bread.
