Recipe: Fish Chowder



Fish chowder always sounded pretty gross to me. Fish stew? Eugh. However, my mum ordered it at a restaurant recently and hasn't stopped raving about it since. I decided I'd have a go at making one myself and seeing what all the fuss was about. 


You will need:

1 tsp olive oil
1 leek sliced
200g pnew potatoes sliced
500ml fish stock
150ml milk
100g sweetcorn
salt & pepper to season
warm bread and butter

How to do it:

Heat the oil in a large sauce pan.
Fry the leek for about 4-5 minutes until softened. 
Add the potatoes and cook for a couple of minutes. 
Add the fish stock and milk and cook until the potatoes have softened. 
Add the sweetcorn, fish pie mix and seafood mix. and cook for roughly five minutes until the fish is just cooked and tender. 
Serve in big soup bowls with salt and pepper to taste and with warm bread and butter. 

And that's it. It's so simple, looks great, tastes great and looks like you've made a real effort. I love this with warm tiger bread and butter but apparently the proper way to do it is by crumbling crackers into it.
