The best of breakfast

Breakfast recipes

If you've been reading this little blog for a while you will know that I love breakfast. It's recently become my favourite meals, and Australia definitely had a role in making it so. Beautiful fresh fruit and different fruits are a big role in my breakfasts and I love getting creative with them. It's a great feeling getting out of bed knowing you've got a good breakfast idea in your head, it makes getting up a lot easier as well. 

So today I thought I'd share with you my favourite breakfasts right now. 

porridge


This is definitely one for cold winter mornings. It definitely warms up your belly and is jam packed of good stuff to give you lots of get up and go. The combination of peanut butter and dates creates a taste similar to a snickers bar hence the name...

Snickers Porridge
1/2 cup of porridge oats
1 cup of milk of your choice
5 dates
Crunchy peanut butter a(as much as you like)
1tsp of chia seeds

Add the milk and oats to a pan over a medium heat and stir until the oats are cooked and you've reach the porridge consistency you like. 
Chop the dates in half and pit them if necessary then chuck everything on top. 
Obviously for the photo I didn't do this step but I like to stir everything in so the peanut butter melts through the porridge.

This one's a bit more summer and also one I prefer more on a Saturday morning. It's light, fruity and refreshing. 

Berry Nice Cream Bowl
1/2 cup of frozen berries
1/2 cup of low fat Greek yoghurt
1tbsp honey
1/2 cup granola
1 banana
Grapes or berries to top

Put the frozen berries, yoghurt and honey in a blender and blitz until they form an ice cream type consistency. 
Once you've done that pour into a bowl and top with your granola (I like an almond and honey esque one - nothing too fruity), chopped banana and some berries or grapes.

This is the perfect alternative to a Sunday morning fried breakfast. It's much healthier and I think tastier. This cooked breakfast bowl is perfect for a lazy Sunday morning. 

Cooked Breakfast Bowl

1/2 onion
1 piece of garlic
1 chilli (optional)
1 stick of celery
1 grated carrot
2 rashers of bacon - sliced 
1/2 can of haricot or kidney beans
1/2 tin of tomatoes
1 egg

Chop the onion, chilli and celery and crush the garlic.
Add them all to a small frying pan until the onion is almost clear and the celery softened
Add the bacon and fry until crispy
Add the beans, tomatoes, and grated carrot and cook for about 5 minutes.
Crack the egg onto the mixture and then bake in the oven for 5.10 minutes until the white is firm and the yolk just cooked. 
Serve into a bowl and enjoy.

So there you go three easy, healthy breakfasts to enjoy throughout the week.
